A Southern Twenty-Five on Friday

There are so many things that I'm looking forward to over the next two months... Easter, two rehearsal dinners, three weddings, a visit from my brother, a weekend trip to Edisto,  time to catch up with old friends, shopping trips, etc that I have to remind myself to stop counting down until June 1. I can officially move into my new apartment on that day and I cannot wait to move in but I have to remind myself there's a lot of things to enjoy between now and then. Slow down.

It's FRIDAY though so let's get to it!

Meet Abby:

Abby and I went to elementary school together but never really knew each other. Fast forward to senior year of high school when we were both accepted to Clemson. Her older sister was dating one of my brother's good friends and someone joked around about how we should be roommates. We went on a "roommate date" to Bellacino's, decided we could tolerate each other, and have been friends ever since. But... living in two different cities with two super hectic schedules, I don't get to see her/catch up with her nearly as often as I would like to. That's about to change as she's coming down to Kiawah this weekend! I don't know who is more excited though - me or my mother.

The Greenway.

My bike & I have missed you. Thank goodness for warmer weather & longer days!

I only hope that my legs hold out for tomorrow. Working out in the mornings & then biking in the evenings is bound to catch up to me sooner than later but I hope it's after the 10K.

{three}
My friend Stephen, who usually ends up being my taste tester for new recipes, got adventurous with the crock pot this week and made spaghetti and had a few of us over for dinner and a movie.

It was delicious. He's now officially in charge of spaghetti nights, although the girls are retaining movie selection rights.

{four}
I made the trip out to the farmer's market again this morning before work, just like last week, because I didn't want to miss out on a week of amazing fresh food. I made Patrick's famous Grilled Corn on the Cob, attempted cooking my first spaghetti squash {to great success}, and roasted some zucchini with parmesan cheese. Honestly, my favorite was the spaghetti squash especially since the leftovers were easy to cook again for lunch the next day. & apologies, if you follow me on Instagram then you've already seen these pictures...

 Same thing, just with chicken added. Easy fix for lunch!

Yeah so I was on a roasting & parmesan kick this week. Roasted zucchini with parmesan cheese & marinara sauce.

I'm going to be attending in about a month that will be held here:

Yup. The wedding will be on the beach late one Saturday afternoon in May. What in the world do you wear to a wedding on a beach?!

  1. The bike ride looks glorious - makes me want to whip out my bike and take it for a spin!! All I can say is don't wear heels if you're having to trek it out on the beach for the wedding lol ;)

  3. That zucchini looks the best! I would go for a light pink shaded dress for the wedding on the beach and pearls oh and you can totally pull off a big cute sun hat!! Happy Friday!

  6. I love Spaghetti squash too. I think any dress w/ a cardigan (if it is too windy) and jack rogers would be perfect for a beach wedding.

  12. I am so happy that biking weather is back and it's farmer's market season! I was apprehensive about spaghetti squash at first, but it's a great base for almost anything (especially cheese!). :)

    Save yourself some struggle and wear a cute sandal or flats to the beach wedding...heels are not sand's friend. Go with a cute, light weight dress!

  13. I love spaghetti squash & we practically roast everything over here! I swear it makes everything taste so much better!! I'll have to try the zucchinis with parm! Oh and I'd probably go with a maxi dress (so you don't have to worry about the wind blowing up your dress for all to see) and definitely flat sandals.   14. Oh, the Charlotte Greenway...how I miss it dearly! How exciting that you get to go to a beach wedding! I totally love spring maxi's but make sure you wear wedges so the dress doesn't drag in the sand. Or you could wear a cute knee length sundress!

  16. My friend got married on the beach and us bridesmaids were in flip flops (havaianas) with our dresses. Most women guests wore flowery dresses and nice sandals, and some brave ones wore wedges. I'd go with a summery color and nice sandals!
