Anyone else in disbelief that it's already April or is it just me?
Don't get me wrong, I'm glad it's already April. It means that we've got more daylight in the evenings, 85 degree days, plenty of sunshine, and we're SO close to summertime days at the beach! What's not to love?
It's been a whirlwind weekend around here with a quick trip up to Charlotte and a charity event to go to last night once we got back to town. But it's back to settling down for the week & hopefully getting some yard work today {minus any encounters with our snakey friend}
Here's what we have on the menu in our house this week:
Sunday - Crockpot Beef & Broccoli Over Rice
Tuesday - Taco Tuesday
Wednesday - Brined & Oven Baked Chicken w/ Veggies
Thursday - Out to Dinner
Friday - Hamburgers, Sweet Potato FF, & Corn on the Cob
Saturday - Out to Dinner
The Crockpot Beef & Broccoli recipe was one that my parents cooked up for us for our Christmas dinner a couple of years ago and we love it! It's so flavorful and delicious. Sundays are becoming our crockpot days since we are usually pretty busy running around town or doing things around the house on Sunday afternoons.
New for us this week? The One Pan Crispy Parmesan Garlic Chicken w/ Veggies. I was in the mood for a new chicken recipe so I scoured Pinterest last week to find that one. It sounds great so I hope that it turns out as great as it sounds!
I'm off to enjoy the beautiful day we're rocking here in Columbia today. Hope y'all get out and enjoy it, too!
Bookmarking that slow cooker broccoli and beef. I love any easy meal add in Chinese food and it's on!
